Coconut Tartlet 一口椰撻




I often regard coconut tart as a twin of egg tart. Both are a staples in Asian bakeries. However, I think coconut tart is easier to make and has a higher successful rate than egg tart. By using a smaller size tart mold makes it so cute and have no guilt feeling in eating more than one!

If you follow my blog, you would notice that I like snacks, appetizers or small bites food a lot. This is another good one that is very popular in Asia. It is not difficult nor complicated to make if you could get fried fish skin from local restaurant or store.

Walnut and Date Tartlet 合桃棗蓉撻


This is a great finger food for parties because it involves minimal preparation. All the ingredients are store bought--date paste, puff pastries, and walnuts. I call it semi-homemade. The date paste is made with 100% dates, no sugar added, so it is naturally sweet. It is very convenient to use and work with and can be found in Mediterranean/Middle Eastern or international grocery stores. Puff pastries are also available in the frozen section of most American grocery stores. I always keep some in my freezer. The spices in this recipe--nutmeg and cardamom--are best whole, and freshly ground right before being used.

Lemon Mini Cupcake with homemade Limoncello 檸檬小蛋糕


With an abundance harvest of lemons, I have been searching for ways to make use of this citrus fruit: Lemon Bar 檸檬巴, Chicken pot with Preserved Lemon 惹味雞煲, Ginger and Lemon in Vinegar 八珍陳皮檸檬薑, Lemon Chiffon cake with Ginger Mousse 薑汁慕絲檸檬蛋糕, and Lemon Cream Tart 檸檬撻

This year with homemade lemon liquor, I made this refreshing treat.

Hand Made Egg Roll 香脆手工蛋卷


Making egg rolls has been on my to-do list for quite some time. It is a very straightforward recipe, using only butter, egg, sugar, and flour. They just need to be blended together with a handheld mixer for a few minutes and the batter is ready to be cooked. But it does need a special pan that can be flipped to cook both sides. I tried different recipes and this one is the best, full of egg flavor and with a pleasantly crunchy texture.

Chestnut Tartlet 小栗子撻


These bite sized mini tarts are perfect to be served at a party without the hassle and mess of cutting a whole tart. Many people seem to enjoy finger foods more! The tart crust can be prepared one to two days ahead of time and the filling can be piped in the same day of serving.

Sriracha Honey Popcorn 是拉差爆谷


The popularity of this hot sauce is quite the phenomenon. There are not a lot of products that only rely on word of mouth and reach such a level of success. People who love Sriracha put it in almost everything they eat. There are even Sriracha mayonnaise and ketchup in the market.

So when I was flipping through the pages of a new cookbook named The Kitchn (without an "e"), this recipe for Sriracha popcorn caught my eyes.

Custard Moon Cake 奶黃月餅


These exquisite moon cakes are created by innovative bakers from Hong Kong. A box of eight reportedly fetches almost HK$500 (~USD$65-70)!! The cake is filled with moist and rich custard with a nice coconut flavor. The recipe is straight forward but it takes some tricks and a lot of practice to create a nice and distinctive look.

I tried different recipes and finally came up with this one with modifications.

這款近年風靡香港的奶黃月餅,身價越來越貴,據報一盒八個要港幣近五百大元 !!
不過又真是很好食,奶黃餡香滑,加上一杯熱茶,真是一絕。

Tea Eggs with Five Spices 五香茶葉蛋


There are certain things in life that really train or test your patience. If I were to rate which role would be the toughest test of patience, I would vote that being a parent is number one. I think many parents would be on my side. From taking care of an infant to parenting a teenager, there are endless challenges a parent has to face. It is through these trials that we all mature and grow up.

Another role that build up one's patience level is to be a cook. As it is said, no pain, no gain. To make a good meal, you simply have to put in time and effort. I am not referring to instant TV dinners or instant noodles. I have learned much about patience and perseverance through cooking and baking. Making yeast bread takes hours; aged dough takes days to mature; a successful batch of French macaron took me over ten trials to achieve.

Take these tea eggs as another trial of patience. Making hard boiled eggs does not require a lot of time nor patience. But to make delicious tea eggs, there is no shortcuts. In order for the marinade to infuse into the eggs, they have to sit overnight. Without patience, you will just have hard boiled eggs.

Remember, no shortcuts!!

Chinese Pork Jerky with Fruity Flavor 果汁豬肉乾


I am a big fan of jerky. It is a great snack to have while watching TV or to serve in a party. However, instead of American store-bought flavors I more particularly like jerky styled after Chinese flavors. It is more juicy and flavorful. The last time I visited Hong Kong, I had a great time satisfying my appetite! Too bad meat products are prohibited from entering or leaving the country, or otherwise I would have filled up my bags with them.

Here in America, you can only buy jerky that is made in this country. Those Chinese brands that you see in Asian grocery stores most likely are not made overseas.

Making it at home is far simpler than you would expect, with a low failure rate. You can easily choose a flavor you like without adding sodium nitrate or any preservatives!

Quail Egg Croquettes 鵪鶉蛋薯蓉球


What is a croquette? If you search it up online, you would get "a small cake or ball of minced meat, poultry, or fish or of rice, potato, often coated with beaten egg and bread crumbs and fried in deep fat." (dictionary.com)

Its French root "croquer" means "to crunch". But since its French birth, there have been many many varieties from many many countries trying to give it a new twist. In this version, I attempted to bake it for a healthier version in comparison to deep frying it. My food critics at home gave them thumbs up. This is a great party and finger food.

Tuna Strudels 香脆吞那魚卷


What comes to your mind when you think of an appetizer ? Savory, finger food, easy to prepare, may be crunchy, etc? This appetizer fits all of the above. I use honey mustard as a sauce to make it really appetizing. All the ingredients are store bought, which made it exceptionally easy to make. Not counting the time the fillo sheets need to defrost, it only takes 30-45 minutes from start to finish. A great party or potluck choice !

Pig Ear Terrine 豬耳凍



I was a little bit surprised when I read the newspaper last Saturday. In the food section, it featured a recipe and article about a dish using pig's ear. As with recipes including chicken feet, dishes with pig's ear is not popular among Americans. However, it may not be too foreign to you if you are a descendant of Asia. (My American born kids love to have chicken feet, pig ear, tongue, stomach and beef tripe.)

Soy Sauce Egg 鹵水蛋



Hard boiled eggs sound easy to make. I remember it was one of the small and simple tasks that was taught to me by my mom when I was young. I was not properly instructed at the time and most of the time the eggs cracked while boiling and the whites spilled out and it became ugly.  And sometimes the yolk is completely runny....There is so much science involved: click here to read an experiment on boiling eggs. In reality, it is more than a simple task...

Now I am a mom, I want to make sure that my children know how to boil an egg properly.

Stuffed Mushrooms with Ground Pork 焗釀磨菇


This is a very simple and easy to do dish. It is a great appetizer to any dinner. You can also use different ingredients for the stuffing. For this one I used ground pork, but ground beef or sausages(without casings) can be used as well. Chopped onions and green onions will be great additions as well ( I did not include them because of one of my picky eaters does not like them).
