Black Sesame Classic Sponge Cake 黑芝麻古早味蛋糕




"沒有最好,只有更好" 用來形容這蛋糕真是最貼切。口感鬆軟、細膩,有入口即溶的感覺。成份沒有牛油,只用液體菜油。健康簡單,不用什麼裝飾或餡料,它已是一款很受歡迎的甜品 (特別在台灣、香港等地方)。今次我加入黑芝麻粉,香味濃郁,吃完一件又想吃多件。

If I were to describe this cake in a few words, it would be that it bested the best. But as they say, there is always room for improvement, and I know that in the future I will find a way to make a cake even better than this one. But for now, this cake only uses vegetable oil. Without the use of any butter at all, it is incredibly light and soft and gives you a feeling of melt-in-your-mouth cotton candy. No wonder it is so popular in Taiwan and Hong Kong. The addition of black sesame powder not only makes it more healthy, but it also imparts an irresistible aroma.

2) Mille Crepes

Time: 1-4pm

Fee: $50
Class size: 3-6 students

Both desserts do not involve any baking and I will show you step by step so you can make these yummy desserts for the holidays. Class fee includes all ingredients, recipe and a take home product.

Lemon Mini Cupcake with homemade Limoncello 檸檬小蛋糕


With an abundance harvest of lemons, I have been searching for ways to make use of this citrus fruit: Lemon Bar 檸檬巴, Chicken pot with Preserved Lemon 惹味雞煲, Ginger and Lemon in Vinegar 八珍陳皮檸檬薑, Lemon Chiffon cake with Ginger Mousse 薑汁慕絲檸檬蛋糕, and Lemon Cream Tart 檸檬撻

This year with homemade lemon liquor, I made this refreshing treat.

Apple Cake (no added sugar) 萍果蛋糕 (無添加白糖)


This is my first time baking without granulated sugar and the result is surprisingly good. Maple syrup gives the cake a fine and moist crumb. A good choice for Fall dessert.

It is a straightforward recipe and easy to follow. It uses the simple muffin method which the dry ingredients are mixed in a bowl and the wet in another bowl then they are mixed together and bake.

The Best and Easiest Ma Lai Gao 最好味及易做的馬拉糕


This is my third update of some of the older recipes/posts (the other two are: Pineapple Cake/PastryTurnip Cake). The old Ma Lai Gao recipe uses an aged dough, which takes a long time and a lot of patience. This new one is a lot simpler to make and does not require lye while the result is still soft and fluffy.

Kabocha Squash Spice Cake (no added sugar) 日本南瓜蛋糕 (無添加白糖)


Kabocha is a variety of pumpkin which originates from Japan and can be found commonly in many Asian supermarkets. It is small and more meaty compared to other huge pumpkins. The flesh is creamy and sweet which makes it good for pairing with savory dishes like steamed spareribs or making desserts. The skin is also soft and edible after steaming or cooking.

In addition to the sweetness of the kabocha, this cake is also sweetened with Medjool dates. The dates give the cake a natural sweetness. Vegetable oil is used instead of butter, which makes it as healthy as ever.

This may be a good choice for your pumpkin pie alternative this season!

Steamed Pandan Coconut Multilayer Cake 班蘭椰汁千層糕


The first time I had this dessert, I thought it was made from glutinous flour because it was soft, chewy, and starchy. But how wrong was I! There is another kind of flour which produces a very similar texture. It is tapioca flour. Being a very popular flour in Asia, it is used in various kinds of dishes, especially in desserts. For people living in North America, the word tapioca is synonymous with boba. The pearl-like balls, usually black, are commonly found in milk tea and other drinks. If you like them, then you will appreciate the texture of this Indonesian dessert.

Magic Chocolate Custard Layers Cake 奇妙多層朱古力蛋糕



The original name of this cake is prajitura desteapta which means "smart cake" in Romanian. This cake is also often referred to as magic cake because there are different layers and textures baked from one single batter. As you bite into the cake, you will be amazed by the different textures. I was intrigued by it and started to search for the rationale behind it.

The way it is prepared is basically the same as any chiffon or sponge cake. The eggs are separated from the yolks, which are mixed with the sugar, fat, liquid and flour while the whites are beaten to stiff peaks. Then the two are reunited and baked.

What makes it different from ordinary cake is the temperature of the oven and the amount of liquid. I am always amazed by how understanding the science can make one a better baker.

Chocolate Almond Cake 香濃朱古力杏仁蛋糕


How can I describe this cake? It's moist and light. It melts in your mouth and is full of chocolate flavor. The addition of almond gives it a nutty flavor, and the cake isn't too sweet....in one word: delightful!

The original name of this cake is called Queen of Sheba. The recipe is one of the renowned chef Julia Child's. But unfortunately I forgot which cookbook it was published in. : (

I did make some adjustments, not to the ingredients, but as to how they are put together.

Buy the best chocolate you can get your hands on as it is the major ingredient and it does make a big difference to the quality of the cake.

Strawberry Cheesecake (No Bake) 草莓芝士凍餅



This has been the longest stretch since my last post on 2/10/15. What I have been doing for the past month? I took a vacation to visit family and meet some friends whom I have lost contact with for more than two decades. It is a great feeling to reconnect with old friends and catch up with each others' lives. 

What is most precious is after all these years we still treasure our friendship. 

Genuine friendship can pass the test of time!

Tiramisu Cupcake 提拉米蘇杯子蛋糕



Believe or not, this is my first post on cupcakes. Although cupcakes have been popular for such a long time, for some reason I am not into this trend. My food critics at home have been bugging me to make cupcakes for a long time. I yielded to their requests when I saw this recipe on King Arthur's blog. It is a twist on the classic tiramisu, building on a cupcake.

I modified the recipe quite a bit and made it my own version with significantly less sugar. I call it an adult cupcake.

Chinese Steamed Cake Ma Lai Gao 古法馬拉糕


Dim Sum Series, part 4:

This steamed cake is called ma lai gao. I have tried a few recipes using different ways to leaven the cake batter: beating whole eggs (physical), using yeast (biological) and/or baking soda/powder (chemical). None of the above gave me a satisfactory result.

The average maximum heat a household steamer can generate is about 212F/100C. This temperature is so much lower than the usual 350F/180C oven temperature used in baking a cake. It means that the way the cake batter is prepared is a crucial factor in determining whether it is a dense or soft cake.

I kept telling myself that there must be a way to make a fluffy and moist steamed cake. So, as a last resort, I went back to the traditional method: using an aged (prefermented) dough. This is a combination of biological and chemical methods. By making an aged dough (similar to a levain in making a sourdough bread), natural yeast and bacteria are cultivated. Later on, baking soda is added to balance the pH level. Leavening is provided by the yeast and baking powder. Although egg beating is not required in this recipe, some patience and time is required :).... However, you will be rewarded with a steamed melt-in-your-mouth cake that was achieved without the addition of lard (commonly used in restaurants).

Pandan Chiffon Cake 班蘭雪紡蛋糕



Don't be mistaken by the color of this cake. It is not from artificial coloring. It is from the chlorophyll of pandan. Pandan leaves are very popular in South East Asia. They are widely used in making rice, main dishes and desserts. It is best to use fresh leaves but here in North America, we have to settle for frozen ones.

It takes a little bit of planning in making this pandan chiffon cake, unless you prefer to use artificial pandan flavoring or canned pandan juice because it takes a few days for the pandan juice to settle so that the bitter liquid will be separated from the flavorful juice. (If you have access to a centrifuge, it will take a few minutes rather than a few days.) See notes on how to make the juice.

The aroma of this cake is unbelievable. The scent of pandan is very unique. It has a nick name: "vanilla of the East". I didn't use any frosting or garnishes on this cake because I do not want anything to mask its aroma and flavor. It is very good by itself!

Honeycomb Cake 蜂巢蛋糕


Do you believe looks are deceiving? I believe that we all have an experience of getting fooled by an object's appearance. Sometimes an unattractive look may hide something that is the opposite. It is so true to this cake. I did not find it very appealing at first sight, but as I cut across it and took a look, I was surprise to find the gem inside--a honeycomb-like appearance. The little holes are perfectly aligned to mimic the look of a honeycomb (just mimic, because a honeycomb is made up of hexagons, not circles).

Omega-3 Banana Muffins 超健康版香蕉蛋糕


By looking at the title of this post, you may wonder what this is all about. I was inspired by a recipe in a book called The Queen of Fats by Susan Allport. It is not a cookbook in any way. Its subtitle is "why omega-3s were removed from the Western diet and what we can do to replace them". By reading the subtitle I guess you can get an idea what the book is all about. I do not intend to do a book report here. If you are interested, you can check it out from the library. In short, omega-3 is the good fat that our body needs in order to function properly, especially our brain and eyes. Fish, walnut, flaxseed, fruit, vegetable, and so on are good sources of omega-3. But most of the processed foods in the market have had the omega-3 removed because it has a short shelf life. This is another reason to avoid processed foods in general.

Chestnut Cake Roll 栗子蛋糕卷




It's been a while since my last post on making cakes. I couldn't believe it's been that long--on July 16, 2012, the post on Match Mousse Cake was my last cake recipe. Almost a year has passed! Does it mean that I have not enjoyed having cake for the past 10 months? No way! It just means that there are other recipes or dishes that I would like to post more of. 

If you browse my recipe index, you would find 32 posts under the category of "cakes". That is quite a number. They are all my beloved cakes.

If you are a regular reader, you would notice that I am a chestnut lover. This is my 4th post relating to chestnuts already. Just like chocolate, I can't get enough of it.
