Black Sesame Ice Cream 黑芝麻雪糕

What a way to enjoy dessert the healthy way--whole grain ice cream! Store-bought black sesame ice cream can never come close to this homemade version. The aroma of the freshly toasted sesame is what makes it distinct. Dessert usually appeals to us with presentation, color or other arrangements. But this ice cream's wonderful aroma is amazingly tempting and appetizing. I almost could not wait for it to harden before digging into it.
This recipe is not custard based (no egg yolk) therefore it does not involve any cooking. How easy and simple can it get!

Julia Child's answer when she was asked about her "guilty pleasures" was "I have no guilt."
I have no guilt in enjoying this ice cream in hot summer days as well!

任何在市面上買到的黑芝麻雪糕都不能與自製的比較, 因為新鮮炒香了的黑芝麻所散發的香味是無與倫比的, 一般的甜品吸引人是靠它的顏色、包裝或擺放的藝術, 但這款雪糕是靠它的香味, 它使我垂涎三尺! 這款用全穀做成的甜品也可以很健康的啊。這個雪糕食譜是最基本及簡單, 不需要煮, 因為沒有用蛋黃啊!

曾經有人問明廚Julia Child什麼食物令她食了有內疚感時,她說:『我沒有內疚。』

1 cup whole milk
2 cups heavy cream
3/4 cup/150g sugar
6 tbsp black sesame powder
4 tsp black sesame, toasted

1)  Toast the sesame in a preheated 350F oven for about 10 minutes. Alternatively, put the sesame in a pan under medium heat until they pop, about 3-5 minutes. Stir occasionally and let it cool completely before adding it into the ice cream.
2)  Whisk sugar with milk for a few minutes until the sugar dissolves. Add the heavy cream and sesame powder. Mix well.
3)  Churn in an ice cream machine and add the toasted sesame in the last 5 minutes. Follow the manufacturer's instructions.

首先要用中火炒香芝麻, 聽到有噗噗聲便熄火, 待涼。糖加入凍奶內攪至溶, 約一兩分鐘, 然後加入凍奶油及芝麻粉, 拌勻便可倒入雪糕機攪拌, 在最後攪拌之五分鐘前再放入已炒香之芝麻便成。
