Biscotti with walnuts and cranberries



Biscotti means "cooked twice" in Italian. A few weeks ago I made the lean version crisp chocolate biscotti, now it's time for the real thing :). For me, it's twice baked as well ! This time it has all the butter in it to make it all crispy and buttery.

This recipe is provided by my dear sister Patricia Chan, who also is a passionate cook and baker, my supporter and inspiration!!

2 2/3 c all purpose flour
2 sticks of unsalted butter
4 large eggs
1.5 cups sugar
2 tsp cinnamon
1 tsp baking soda
2 tsp baking powder
4 tsp maple syrup
2 c walnuts, chopped
1/2 c dried cranberries (optional)


1)  Beat melted butter, sugar and eggs together until creamy.
2)  Add the rest of the ingredients. Mix with a spoon into a log shape.
3)  Wrap in plastic wrap or wax paper and freeze until firm, about 1 hour.
4)  Remove wrap or paper and bake in a preheated 350 F oven for 30-35 minutes, or until the top is hard when you touch it.
5)  Cool on a rack for at least 15 minutes. Cut with a serrated knife into half an inch thick.
6)  Lay the cookies cut side down and bake at 250 F for 25-30 minutes. Cool completely on a rack before serving and/or storage.

Notes:
1)  Other type of nuts can be used.

  4. Hi Dora,

    我想原因可能是你用的刀不夠鋒利,最好能用有鋸齒的(serrated knife),盡量用as few strokes as possible. See if this help !

    我是用有鋸齒的面包刀,很利的,但未切時,用手不大力地按下已經散,是否BAKING POWER的分量問題呢?因為在烘的過程,到最後餅面好像蛋糕似的鬆開/烈開,請你指教,看看我是甚麼問題出錯.

  6. Hi Dora,
    Are you sure the flour is measured right.You need to sieve the baking powder with flour.When it looks like the bread and touch it.It is a little bit tender.You can take it out.Cool down for 10-20 mins and cut it in pieces.Return to oven for low heat 200 until crispy.Different oven has it's own temperature.I realized that until my sister Phoebe came to my house and baked cakes for me.I use this rescipes for long time.Every time the baking time is different.I will advise you try it again.My colleague love my biscotti.

    不知你是用量杯或用磅去measure麵粉的呢 ?我大大建意你用磅,量杯用來量液體是好,但不適合用來量重量,分別有時是很多的。2⅔ cup=264g

    另外baking powder你或可減至1tsp試吓。
