Chocolate Gelato 朱古力雪糕

My family admits to being addicted to chocolate. We are also addicted to homemade gelato ever since we bought the ice cream machine a while ago. I don't think we would go back to supermarket grade ice cream if we were given the choice. This chocolate gelato is so rich and full of chocolate that it satisfies the chocoholics at home. By doing it at home, we can select the finest ingredients and no other additives !!

Ingredients to make 1 quart of gelato:

2 cups whole milk
1 cup heavy cream
cup unsweetened cocoa powder
½ cup bittersweet chocolate chips, 60%
4 egg yolks
cup sugar

1)  In a sauce pan, heat milk and cream using medium heat until small bubbles start to form around the edge (or until it reaches 170F). Turn off the heat and add the cocoa powder and chocolate chips. Mix until the chocolate chips are melted.
2)  Whisk egg yolks and sugar in a separate bowl until it is well incorporated.
3)  Temper the yolks by slowly pouring the hot chocolate milk mixture while whisking constantly.
4)  Return the custard to the pan and place over low heat. Stir with a wooden spoon until it is thick enough to coat the back of the spoon (or until it reaches 185F). Do not let it boil. It should take no longer than one or two minutes.
5)  Let it cool completely and refrigerate at least 4 hours or overnight.
6)  Follow the instructions of the ice cream machine.

Variation: to make Rocky Road, add marshmallow and toasted almond during the last five minutes of churning.


我的家人除了喜歡食朱古力外,對於雪糕也是情有獨鍾。我們自從買了一部雪糕機之後,便沒有再光顧普通的超市雪糕了。這款自製朱古力雪糕,不單朱古力味濃郁香滑,更沒有其他添加劑啊 !


全脂牛奶  二杯
奶油  一杯
唂咕粉 三分一杯
60% 苦甜朱古力片 半杯
蛋黄  四個
糖  三分之二杯

1)  牛奶與奶油用小火加熱至有小氣泡出現(170F),熄火。加入唂咕粉及朱古力片,攪至溶化。
2)  蛋黄加糖打勻,將熱奶慢慢倒入,一邊倒要一邊不停攪,然後倒回煲中,用小火加熱至185F,不要全滾,要攪動,只要一兩分鐘便可。
3)  完全凍後便放入雪柜至少四小時或過夜備用。
4)  然後跟着雪糕機的指示便可。
