Mango Roll 芒果腸粉

Long time no post! As I looked back to my 275 posts throughout the years, mango is one of my favorite subjects--with over 13 different recipes!

Here is my latest and new beloved dessert:

200ml coconut milk, unsweetened
100 ml whole milk
300 ml water
30g konjac powder 蒟蒻粉
25g sugar

1) Put milk, coconut milk, water, sugar and konjac powder in a pot. Bring it to a boil with stirring.
2) Remove from heat. Pour onto swallow dishes or pans. Let cool to room temp. Refrigerate until set.

3) Add mangos and roll up.

40 Serve cold with mango puree on top.

Note: mango can be substituted with other fruits. For vegan version: use almond or soy milk. Let your creativity reign!
