Whole Wheat Chocolate Muffins with Oats and Ground Flaxseed


This is an ultra-healthy muffin with whole wheat flour, oats, ground flaxseed and mashed sweet potato. They are so moist, soft and filled with healthy stuff that they are good for breakfast, snack...or eaten any time of the day. Did I mention that they are super easy to make, too?


Makes 12 muffins

Ingredients:

Dry  Stuff:
1 cup whole wheat flour
½ cup oats
½ cup ground flaxseed
1.5 tsp baking powder
1 tsp baking soda
¼ tsp salt
1 tbsp cinnamon
2 tbsp unsweetened cocoa powder
½ cup semi-sweet chocolate chips

 

Wet Stuff:
1 cup sugar
2 large eggs
1 cup buttermilk
1 cup sweet potato puree
½ cup vegetable oil

1)  Mix all the dry stuff in a big bowl.
2)  In another bowl, slightly beat the eggs and add sugar. Blend well. Add the rest of the wet stuff. Mix well.
3)  Pour the wet stuff into the dry stuff bowl and mix slightly. Do not overmix.
4)  Spoon into a 12 cup muffin tin either lined with paper or sprayed with oil.
5)  Bake at a preheated 375F oven for 20-25 minutes until a toothpick comes out clean.
6)  Cool them on a rack. Serve warm or at room temperature.


Notes:

1)  Chopped nuts and dried fruits like raisins can be added or replace the chocolate chips.
2)  Sweet potato puree can be substituted with pumpkin for a different flavor.

  2. Well just peel the skin and steam it until soft, 15-20 minutes. Then mash it like you make mash potato.
