Christmas Cake Pops 聖誕蛋糕棒棒


I guess everyone is familiar with popsicle or icicle but how about cake pop? Instead of using fruit juice or ice cream to put on a stick, it is basically a stick with cake crumbs and frosting. It has been around for a while and mainly popular among the younger demographic. It can be molded into different shapes and decorated with colorful candies or other edible ornaments. No wonder it is so warmly welcomed by the kids. Instead of making cookies for Christmas, it is a nice change to make cake pops!

雪條、冰條或許大家都不會陌生,但是將蛋糕用糖果棒串起來食就真是别開生面了。其實這個玩意也不是新鮮的了,它很受小朋友歡迎,不同的顏色很具吸引力,又可以做成不同造形,最適合富有創意及藝術感的人做。自問創意及藝術細胞有限,我本來不打算做,今次我只在女兒的催促下與她一起"玩"。如你家中也有小朋友,這也不失為一項很好的親子活動啊,聖誕曲奇做得多,不如今年就試吓這種新玩意啦!

Ingredients to make 45-50 cake pops:
1 cake, 8" or 9" chocolate, plain (vanilla),  red velvet, or any other flavor

Cream Cheese Frosting:
5 tbsp butter, room temperature
5 oz cream cheese, room temperature
2 1/2 cups powdered sugar
1 tsp vanilla extract

45-50 lollipop sticks
Candy melts, color and flavor of your choice

1)  Either use your hand, a fork or a food processor to completely crumble the cake.


2)  In a different bowl, cream together the butter and cream cheese until creamy using a mixer, 1-2 minutes.
3)  Add the powdered sugar to the butter-cream cheese mixture in 2 additions. Blend well after each addition.
4)  Add the vanilla extract and mix well.
5)  Put this frosting into the cake crumbs and mix well.
6)  Make small balls with your hands. Refrigerate for at least 2 hours or freeze briefly for 15 minutes to harden. But do not freeze into hard balls.
7)  Melt the candy melts according to the instructions on the package.
8)  Dip a lollipop stick into the melted candy frosting about half an inch deep. Insert the stick into a ball no more than half an inch deep.


9)  Dip the cake ball into the melted candy frosting to completely submerge it. Remove and let the excess drip briefly. Decorations, like sprinkles, can be added at this time before the candy melt hardens.
10)  Stick the cake pop onto a styrofoam block or any other suitable receptacle to dry, about 10 minutes. Do not let the wet candy melt coating touch something, or the cake pops to fall over.
11)  After it is completely dry, it can be optionally dipped in another color.





Notes:
To make things easier, store bought cake mix and frosting can be used.
